soup for the soul

i'm sick.
uhg.
its been about a week and a half....and i can't seem to shake it.

pretty sure its a sinus infection.
but what do i know.

there's nothing better than good ole chicken noodle soup when you're feeling under the weather.
here is my recipe.
its based off what i usually have on hand.
if you have other vegetables you want to use up like celery or potatoes,
throw them in there too.

Slow Simmer Chicken Noodle Soup
8-9 cups chicken stock. from a can, low sodium or from bullion cubes, what ever you have on hand
2-3 carrots diced
1 medium onion diced
2 garlic cloves minced
1 1/2 cups cubed or shredded cooked chicken (from a rotisserie chicken is best or even canned chicken breast works, i use costco's brand.)
6 oz egg noodles, a little less than half of a 1 lb. bag
salt and pepper to taste
cilantro for garnish

place chicken stock, carrots, onion, and garlic in a large stock pot on medium heat.
season with salt and pepper.
cook until the liquid begins to slightly bubble, not reaching a full boil. this takes about 7-8 minutes.
add the chicken** and noodles.
reduce to med-low heat and simmer for about 10-15 minutes until noodles are al dente.
serve with cilantro on top if you like that sort of thing.
get better ;-)

**if you have the time place the cooked chicken in a saute pan on med heat with some olive oil and allow chicken to slightly brown. this step adds an additional depth of flavor.i like mine with cilantro.
