there are some times in your life when you attend a party and try a new dish.
it dances around in your mouth and puts a smile on your face.
you NEED the recipe to go on living.
this was one of those recipes for me.
a few weeks ago i did a tea party for one of my little flower girls from my wedding 3 years ago.
her grandma, joanie k, was in charge of making some munchies for the mom's while the little girls dined on scones and tea sandwiches.
after the little ladies were served i wandered in to the "adult" party to grab a bite to eat.
i tried some of joanie's chicken curry salad and fell in luuuurve.
she was gracious enough to pass this recipe on to me.
she has had this recipe in her arsenal for over 20 years.
i served it at a baby shower this past weekend and many a guest came up to me, mouth agape with this delicious concoction IN their mouths, eyes big saying "RECIPE, please."
like i promised and with joanie's blessings i present to you:
Joanie K's Chicken Curry Salad
1 1/2 cups cooked, cooled rice
1 tablespoon curry powder
2 tablespoons vegetable oil
1 tablespoon vinegar
1/4 cup minced onions
1/2 teaspoon ground ginger
1 cup shredded cooked chicken or one 12 oz. can chicken breast meat (i used costco's)
1 cup diced celery
1/2 cup diced green bell pepper
3/4 cup mayonnaise
1/2 cup regular or golden raisins, optional
mix together the rice, curry, oil, vinegar, onions & ginger.
place in the fridge to chill for about an half hour or longer.
once the curry mixture is thoroughly chilled, in a separate large bowl mix the remaining ingredients together.
fold the curry mixture into the chicken mixture until incorporated.
return to the fridge to chill until you serve it.
great in lettuce cups served as wraps or delicious with pita chips.
one other spectacular way to serve this chicken salad is in half a papaya with the seed scooped out and a generous scoop of this awesomeness in the seeds place!
i doubled the recipe for the shower.
i should have tripled it.
