hot off the press

melty, gooey goooooodness.

you can achieve this state of bliss with one of these:

i use a grill pan.
you can even use a regular skillet if you want.

here is all you need to do to enjoy a grilled, gorgeous panini at home...
even if you don't have a fancy press.

Turkey, Havarti and Cranberry Panini

2 slices of bread, sandwich bread works in a pinch, but try a fresh baguette or sliced sourdough
2 slices of turkey
2 slices of Havarti cheese or what ever you have on hand
fresh or canned cranberry sauce mixed with a touch of mayonnaise
Melted butter or olive oil
Flat pan lid or a heavy sauce pan and a sheet of foil or a brick covered in foil, ala Rachael Ray

Place your grill pan on the stove on medium high heat.
Let it preheat for about 4-5 minutes.
Assemble the sandwich; place the turkey, cheese and cranberry sauce on one half of the bread.
Top with the other half of the bread.
Brush the bread with just a little olive oil or melted butter.
Flip the sandwich and brush other side.

Place the sandwich on the grill pan.
Once you lay the sandwich down, don't move it around.
You want to let the grill lines sear into the bread.
Take your sheet of foil and place it over the sandwich.
Place the heavy sauce pan onto the foil (or your brick cover in foil or your lid) and press down on the sandwich fairly hard for about 10 second.
Once you are done pressing you can leave the pan, lid or brick on the sandwich or remove it.

Grill for 3-4 minutes.
Flip the sandwich and repeat pressing the sandwich.
Grill for another 3-4 minutes or until cheese is melted.
