cool mint oreo ice cream

this ice cream rocked my socks off!!
mint chocolate chip ice cream always reminds me of being a kid.
my dad and i would get it every trip to the ice cream parlor when i was a lil bit.

the munch's all star babysitting team and our good friends kristine and lizzy bought a pack of cool mint oreo's on our last trip to the grocery store.
i had some heavy cream i needed to use up.
i mentioned we should make some ice cream with the oreo's.
hoops and hollers all around!

i especially liked this ice cream because it involved no eggs but the creaminess was pretty spectacular. the minty coolness is spot on.

this is such simple recipe.... just about as simple as ice cream gets.

Cool Mint Oreo Ice Cream

2 cups 2% milk or half & half
2 cups heavy cream
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon peppermint extract
3-6 drops green food coloring (optional)
20-30 cool mint Oreo cookies cut into fourths


In a large bowl, stir together the milk or half & half, cream, sugar, salt, vanilla extract and peppermint extract until the sugar has dissolved.
Add green food coloring until you get your desired shade of green.
Mix until streaks are gone.
Pour the mixture into an ice cream maker and freeze according to the manufacturer's instructions.
I churned my ice cream for about a half hour.

Spoon ice cream into a freezer safe container. Gently mix in Oreo pieces into the ice cream until the cookies are distributed through out. Do not over mix. I recommend mixing in the cookie pieces by hand, otherwise the dark cookie crumbs may alter the color of the ice cream if added to the ice cream maker.
Place in freezer overnight for best results.
