hi!


yes...i am alive!
sorry i've been absent on the blogging front.
i can truly say that my plate has never been as full as it is right now.
to top it all off the munch is finally walking!

just wanted to share with you my guest blog post over on create my event.
this week is about how to have a stress free party.

hopefully things will slow down a little so that i can write a weekly dose and post a few recipes.
i have been so busy that i haven't had time to cook or bake! gasp!!

weekly dose!!

aloha friends and family!
hope you are enjoying spring.
it has been absolutely beautiful here the past few days.

we had a wonderful, fantastic Easter....earthquake and all!
the munch and i started off the morning
with her Easter basket.
this basket is the product of procrastination.
i think its pretty darn cute.
i went to target the day before Easter (what was i THINKING!)
and it was like a vacuum had sucked every piece of Easter merchandise outta the store.
every SINGLE thing was gone.
all i needed was a basket!!
i had already bought all the stuff to put in to it.
i came home and hot glued a feather boa around this little guy.
i had the metal "r" in my craft drawer and slapped it on with some more hot glue.
here is my lil cutie waiting for me to hand her the goods.
giggler.
you took too long mom...i'm not looking.
we'll maybe just a peek.
here we go...her 2nd Easter basket!
elmo socks...a staple for any holiday.
coloring books...
eggies filled with jelly beans...shake it baby!
her very 1st pair of baby sunglasses...actually toddler sunglasses.
i'm still in denial that she's a toddler.
cool dude.

ma'am...i'll need to see your license and registration.
looking at her reflection in the sliding glass door.
good times.
then we were off to church....
He is risen indeed!!
after the last service there was an easter egg hunt for all the kids.
the lil ones under 3 were in the children church building.
its so the big kids don't run them over.
the eggs are just in plain sight and they have fun plopping them into their baskets.
go munchie go!

yes, it is.

then i had the guys take a picture together.
its not very often you find 3 young men
wearing ties for church in orange county.
here are shawn, chandler and jere jae.
we're lucky if chandler shows up to church with shoes on.
so this was definitely a kodak moment.
then i let the tieless wonders join in.

after church we headed home for a bit.
i ran to the grocery store to get some things for dinner.
i was walking up the stairs to our apartment when i felt a little woozy.
i thought i was going to fall over.
i finally made it to our front door and opened it.
jere jae was standing in the middle of the living room holding the munch.
he looked at me and said "we're having an earthquake."
aha! so i was not about to pass out.
we all stood in the door way as the earth shook for about 30 more seconds.
that is one loooong shaker.
it was the smoothest one i have ever felt.
we just slowly rocked back and forth.
the bamboo trees in our courtyard were swaying about 3 feet each way!
we are good...just a little weary of more.
oh and our kitchen slider is not sliding anymore. booooo.

in the late afternoon we headed over to our dear friends
and pastor's home for a delicious Easter dinner.
i took pictures of the food and flowers...
but no real pictures of the beautiful people in attendance.
nice one goober.
i made my layered pea salad topped with heirloom cherry tomatoes and a caesar salad.
i made this daisy and lime centerpiece for our hostess.
its on a small cake plate that she can reuse.
gotta have some Easter candy!

twist and lick or dunk?

how do you eat your oreo's?

do you twist the cookie then lick all of the cream filling off the wafer?
do you dunk it whole?
eat them in one bite?

when i saw this recipe i just had to try it.
homemade oreo's?!?!
com'on now.

the results?
they were really nothing like the store bought version....but they were delicious none the less!
the cookie wafer was soft and a bit chewy.
the creamy filling was not overly sugary but still sweet.
these cookies are best within 48 hours of baking them.
dunk away!!!

Homemade Oreo
{print recipe}

For the chocolate wafers:
1 1/4 cups all-purpose flour
1/2 cup unsweetened Dutch process cocoa
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon Kosher salt
1 cups sugar
1/2 cup plus 2 tablespoons (1 1/4 sticks) room-temperature butter
1 large egg

For the filling:
1/4 cup (1/2 stick) room-temperature butter
1/4 cup vegetable shortening (do not use butter flavored)
2 cups sifted confectioners’ sugar
2 teaspoons vanilla extract
Pinch of salt

Set the oven rack in the middle of the oven and preheat to 375°F.
In a food processor, or bowl of an electric mixer, thoroughly mix the flour, cocoa, baking soda and powder, salt, and sugar. While pulsing, or on low speed, add the butter, and then the egg. Continue processing or mixing until dough comes together in a mass.
Take rounded 1/2 teaspoons of batter and place on a parchment paper-lined baking sheet approximately 2 inches apart.
To get uniformed sized cookies I used a small cookie scoop, took the dough from the scoop and cut it in half, then rolled the halves into balls.
With moistened hands, slightly flatten the dough. Bake for 5-6 minutes, rotating once for even baking. Set baking sheets on a rack to cool.

To make the cream, place butter and shortening in a mixing bowl. On low speed gradually beat in the sugar, vanilla and salt. Turn the mixer on high and beat for 2 to 3 minutes until filling is light and fluffy.

To assemble the cookies, in a pastry bag with a 1/2 inch, round tip, pipe 1/2 teaspoon of the cream into the center of one cookie. Place another cookie, equal in size to the first, on top of the cream. Lightly press, to work the filling evenly to the outsides of the cookie. Continue this process until all the cookies have been sandwiched with cream.
Store in airtight container.

shepherd's pie with ground turkey

 
comfort food at its finest.
this dish is one of those that may not look very pretty but it sure does get the job done in the taste department.

i can not tell you when the last time i bought ground meat was.
i have nothing against it....i have just been purchasing ground turkey as a substitute for years.
i use it in any recipe that calls for ground meat.

since we are heading in to warmer months...this may be the last time we have this for dinner in our home for a while.
its time to fire up that grill!

Shepherd's Pie with Ground Turkey
yields :: 6 servings
{print recipe}

2 pounds potatoes, peeled and quartered
1/2 cup chicken or vegetable stock
1/4 cup half & half
2 tablespoons butter
1 1/2 pounds ground turkey
1 large onion, chopped
1 clove of garlic, minced
1 1/2 cups frozen carrots, corn & peas
salt and pepper to taste

Preheat oven to 400 degrees.
Peel and quarter potatoes. In a large stock pot, pour in the stock, half and half, potatoes and about a 1/2 teaspoon salt.
Bring to a boil and reduce heat to medium and cover. Continue cooking for about 25-30 minutes until potatoes are fork tender.
While potatoes are cooking, heat a large skillet on the stove top on medium heat.
Place ground turkey in skillet and brown.
Add onions and garlic about half way through.
Once turkey is completely browned, drain off any fat.
Add carrots, corn and peas.
Return to skillet to stove on low heat and cook for about 3-5 minutes longer stirring often.

Place ground turkey mixture in the bottom of a 9x13 inch Pyrex pan.
Set aside.
Once potatoes are finished cooking do NOT drain off any liquid.
Mash the potatoes and remaining liquid together in the pot or transfer to bowl of stand mixer to whip.
Add butter and mash or whip the potatoes until smooth and fluffy.
Add more half & half if necessary to reach desired texture.
Salt and pepper to taste.
Add mashed potatoes to top of ground turkey mixture.
Spread to completely cover the turkey mixture. Make some peaks with a fork or spatula.

Place on middle rack in oven and cook for about 30 minutes until golden brown and bubbly.
You may need to broil the top for about 5 minutes to get it really golden brown.
Serve hot.

weekly dose!!

hello everyone!
hope you are having a wonderful first day of april.
that you haven't fallen too hard for any april fool shenanigans
pulled by friends, family or co-workers.
i have been so busy that at 10pm last night
i looked at jere jae and said
"TOMORROW IS APRIL FOOLS! i didn't plan anything!!"
that's right folks...i got nothing up my sleeve.

last year i called up our good friend mike and
told him to stay at work for a few minutes longer
because i was bringing him sushi.
when we got there the munch and i handed him this:
candy sushi.
made with fruit roll ups, rice krispie treats, swedish fish,
jelly beans, donuts and red vines.
we got the container from the sushi restaurant next to us.
hee hee hee.
good times.
i'm sure he went right over to sango sushi to
fix the craving he now had for the real thing ;-)

the munch and i are just laying low today.
she is getting over a double ear infection.
she has been in a funk lately...poor thing.
i think its because she has been locked up in the apartment for a few days.
i did manage to get some great photos of her a few days ago.
she is seriously getting so big i can't handle it.

they checked 4 times before we left hoag with her.
then she began to try and EAT mally!
get. in. my. belly.
she was so determined...i just let her try.
she will get to have a real malasada when we visit o'ahu
this june for my cousins wedding.
hopefully mally will survive until then.

we pray you have a wonderful Easter weekend with loved ones.
i am truly overwhelmed by the love of my Savior this week.
i am supposed to sing a song tomorrow at
our Good Friday services,
but i get choked up every time i try and sing it.
unfailing, perfect love is a beautiful thing.

for God so loved a wretch like me,
He sent His son
so i could be
with Him for all eternity.

that, my friend, is why tomorrow is so very, very good.
